Dry Ager® – Dry Aging Production units are supplied as plug-in solutions and have all the technical features of a fully equipped dry aging production facility.
The integrated UVC sterilisation ensures maximum safety and guarantees perfect dry aging results.
Dry Aged beef, pork, salami, ham and cheese can be produced with unprecedented flexibility.
No fixed water connection is required.
Besides the exact temperature control from 0 to +25 °C, the humidity is also controlled
accurately through the integrated HumiControl™ system, which can be set
electronically between 60 and 90 %. This guarantees, together with the DX AirReg™
system, a perfect micro-climate, an ideal air-flow and continuous sterilisation.
